These cupcakes are light & airy. The fresh strawberry & mint are a different and delicious combination & the cupcakes look quite festive. They are easy to make, too! Confession: I’m lazy. I love homemade (from scratch!) cakes but I frequently doctor up cake mixes. It saves a little time and I find it less intimidating. So, here we go!
You’ll need…
1 box white cake mix
1 box strawberry jello
3 large eggs
1 container vanilla Greek yogurt (6 – 8 oz)
fresh strawberries (amount to your taste but I usually use more than 1/2 but less than a full 16oz container
fresh mint (amount to your taste…I used somewhere around 6 – 8 stalks – I tore the leaves off)
mint extract (be sure to get mint and NOT peppermint extract…mint is a blend of spearmint & peppermint vs. straight peppermint)
fresh brewed mint-infused tea (I used it because I had some made – you only use a splash, so no need to make it just for this recipe)
a food processor (you don’t NEED one but it really does help)
1. pre-heat oven to 350
2. process the fresh strawberries and mint leaves together
3. mix in a couple splashes of mint infused tea, the container of yogurt, and the eggs with the strawberries & mint (I used the food processor to do this)
4. empty the cake mix and jello into a large bowl
5. add a splash or two of mint extract to the dry ingredients
6. pour the wet into the dry and mix away (you can do this by hand or with a hand/stand mixer)
7. line cupcake pan with paper liners OR grease and flour cupcake pans
8. portion batter into the pans, filling the cupcakes about 2/3 full (I use an ice cream scoop)
9. bake away until the smell of strawberries & mint fill the air (also, when you lightly tap the center of the cupcake it will spring back up)
10. remove from oven and let cool
These cupcakes are a pretty, bright pink color with little green flecks. They should be moist and fluffy. 🙂 After pulling them out of the oven & allowing them to cool, I suggest dusting them with powdered sugar and enjoying them!! They are also delicious all by themselves (no icing or powdered sugar) or you could ice them with the icing of your choice. Nom, nom, nom!! 🙂
